Egg snacks nutritious, fun

MISSISSAUGA, Ont. - Egg bugs, sailboat eggs, egg face sandwiches and egg salad cones are fun summer snacks to tickle the fancy of kids.

"This summer, you can easily incorporate some whimsy into the kitchen with some creative twists on classic egg recipes," says Wendi Hiebert, food and nutritional specialist for Egg Farmers of Ontario.

Hard-boil a dozen eggs early in the week and keep them in the refrigerator ready to use, she adds.

The bonus, she says, is that eggs have 14 essential nutrients, including six grams of protein as well as choline, a nutrient found in egg yolks which stimulates brain development and function.

Here's a suggestion for using eggs and getting the kids involved in the preparation.

Egg 'n' Cheese Bug

Roll a plain omelette around cubes of cheddar cheese, strips of processed cheese or grated cheese, then place it in a hot dog bun and garnish with sliced, chopped or grated vegetables. Use sweet pepper strips for legs, sliced cucumbers for wings, olive or cherry tomatoes for eyes, carrot or celery sticks for antennae and shredded lettuce or grated carrots to create "bug fuzz."
