Peach Clafouti

This country-French dessert pancake typically calls for cherries but is just as delicious with peaches and almonds. We love the puffy golden treat warm with whipped cream.

3 medium (about 1 pound) ripe peaches, peeled and sliced 3

3 large eggs 3

1 cup half-and-half or light cream 250 ml

3/4 cup all-purpose flour 180 ml

6 tablespoons margarine or butter, melted and cooled 90 ml

2 tablespoons almond-flavor liquor 30 ml

1/2 teaspoon vanilla extract 2 ml

1/8 teaspoon salt 1 ml

1/3 cup (plus additional 2 tablespoons, per recipe) sugar 80 ml

1/4 cup sliced natural almonds 60 ml

1. Preheat oven to 400 F. Grease shallow 2-quart casserole or baking dish. Arrange peach slices evenly in casserole.

2. In blender, combine eggs, half-and-half, flour, melted margarine or butter, almond liqueur, vanilla, salt and 1/3 cup sugar; blend until smooth.

3. Pour batter over peaches; sprinkle with almonds and remaining 2 tablespoons sugar.

4. Bake clafouti 35 to 40 minutes or until puffed and golden brown. Cool on wire rack 15 minutes (clafouti will deflate as it cools). Serve warm. Serves 8.

Each serving: 275 calories, 15g total fat (4g saturated), 29g carbohydrate, 1g dietary fiber, 6g protein, 89mg cholesterol, 185mg sodium.

Double-Dipped Berries

For an instant party hit, coat ruby-red berries in dark or white chocolate and a mantle of coconut flakes or crushed pistachios or almonds.

20 large strawberries 20

3 ounces semisweet, milk, or white chocolate, melted 90 ml

Toppings: finely chopped pistachio nuts and/or sliced almonds, or sweetened flaked coconut.

1. Rinse strawberries with cold running water; do not remove stems and/or leaves. Pat strawberries completely dry with paper towels.

2. With fingers, hold 1 strawberry and dip into melted chocolate, leaving part of strawberry uncovered. Shake off excess chocolate. Then dip chocolate-covered berry in topping of choice. Place berry on large cookie sheet lined with waxed paper. Repeat with remaining strawberries, chocolate and toppings.

3. Place chocolate-covered strawberries in refrigerator about 15 minutes or until chocolate is set. Strawberries will keep at room temperature up to 2 hours. If not serving right away, refrigerate strawberries up to 4 hours.

Each dipped berry without topping: About 30 calories, 0g protein, 4g carbohydrate, 1g total fat (1g saturated), 0g fiber, 0mg cholesterol, 5mg sodium.
